This post is for those who were raised on canned corn and green beans. Or those whose Western food education has led them to believe that all vegetables must be served raw or steamed till bland and flavorless. In China, vegetables usually take center stage in the various dishes you’ll find there and John over at Sinosplice lays it out for us with words and pictures. 2 Tbs oil
2 cloves minced garlic
1 medium chopped onion
1-2 jin* frozen, crumbled tofu (white)
2 Tbs soy sauce
2 cup tomato sauce
½ tsp cumin
1 Tbs chili powder
Saute onions and garlic in oil. Add tofu and soy sauce. After tofu begins to brown, stir in remaining ingredients. Serve hot over hamburger buns.

1 jin* frozen, then thawed tofu
seasonings (salt, soy, garlic, etc)
3 Tbs oil
½ cup onion, chopped
1 clove garlic, minced
1 ½ cup hot water
4 Tbs peanut butter
1 tsp minced ginger
1-2 Tbs la jiao (spicy peppers)
Cut thawed tofu into strips and bake or fry until lightly browned and crispy. Season to taste with salt, garlic and/or soy sauce and set aside. In a skillet, saute onions and garlic in oil. When soft, add water, ginger, peanut butter, salt and la jiao. Cook and stir until smooth. Place tofu in sauce and stir to coat. Serve with rice or noodles.

3 Tbs oil
1 small onion, chopped
½ cup bread crumbs
1 jin doufu (white), crumbled
¾ T salt
pepper
3 eggs, lightly beaten
sauce of choice
Heat 1 Tbs oil. Saute onion. Combine sauteed onions with remaining ingredients and form into patties. Fry in remaining oil. Serve with sauce.

½ jin* smoked doufu, sliced into strips
¼ cup oil
4-5 green chilies, sliced into strips
2 carrots, sliced into strips
2 garlic cloves, chopped
4 green onions, sliced into strips
salt
la jiao (hot pepper) paste (optional)
Pour ¼ c oil in a hot wok and heat until smoking. Reduce heat to medium and add chilies, doufu, and carrots, stirring constantly. When veggies are cooled, add green onions and garlic, tossing well. Add salt and la jiao to taste, then serve over rice.

2-3 chopped cooked potatoes
½ cup chopped onion
chopped tomatoes or peppers
2-3 eggs, beaten
salt and pepper
cheese (if available)
Sauté onions in oil over medium heat until translucent. Add peppers and tomatoes and cook for a few minutes. Add potatoes and cook until warmed. Season the vegetables to your taste. Pour eggs over all and cover. Cook over LOW heat until set. Sprinkle with cheese, take off heat, and cover. Let sit 2-3 minutes until cheese is melted.
